OK on this weeks podcast I mentioned I had a recipe of pure unadulterated genius.
OK OK I didn’t use the exact term “unadulterated genius” but go with me on this one. This recipe has three ingredients. Minimal utensils for easy clean up. And will guarantee a 2nd date. At minimum your date will be talking about this to all of her friends the next day. Here we go.
- 8″ or so round cast iron skillet. (Your mom owns one if you don’t)
- Two spoons
- Barely a tablespoon of butter
- Maybe a tablespoon of sugar.
- One package of cookie dough.
If you can’t tell I do nothing by measurement in my kitchen. So here goes. Preheat the oven as directed on the cookie dough package.
Take your cast iron skillet and rub the butter on it.
Make sure to cover the bottom and partway up the sides.
Take the sugar and toss it in the skillet. Then shake the skillet around. If done properly you will have a skillet that is now covered in a layer of sugar.
Now take your cookie dough and flatten it to the pan. It helps if you have the cookie dough at room temperature or if you kneed it a few seconds to warm it up. I used half a thing of chocolate chip and half of white chocolate macadamia nut.
Place the skillet into the preheated oven and let it bake 15 minutes. When you remove the skillet from the oven if the cookie seems to jiggle in the center that means it’s not done. Too gooey. The top should be lightly brown too. It could take up to 5 more minutes to bake. Mine took 18 minutes.
Once it’s done add a large scoop of ice cream and two spoons for eating right out of the skillet. Caution: the skillet is super hot.
